Healthy Breakfast Pancake


ingredients
  • 2 egg whites
  • 2 Tbsp oat bran
  • 3 dates chopped
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1-2 Tbsp olive oil
  • 1-2 Tbsp petimezi Karaggelis organic unheated grape syrup
  • 1 tsp sunflower seeds
  • 1 tsp pumpkin seeds
  • fresh fruits in season


instructions
 
In a bowl, using a fork beat egg whites, oat bran, dates, vanilla extract and cinnamon.
Heat olive oil in a small pan, pour the mixture and cook until golden from one side. Flip and cook on the other side.
Top with sunflower seeds, pumpkin seeds and petimezi/grape syrup. 
Sprinkle with cinnamon and enjoy it with fresh fruits.


*you can substitute dates with dried prunes and the nuts with others of your choice.
